Paolo’s Italian Street Food

Chef Simone used to live in Spain and when moved to London was fascinated at our

Spanish and Italian food as such a huge impact in the London food scene. “I have a

love of Spanish food and also a root for Italian food, so when I moved to London I

thought to myself, why not combine the two together? So after weeks of hard work

and testing in the kitchen, Paolo’s Italian Street Food successfully created Paella-

Sotto, a mix of Spanish paella and Italian risotto.

“A lot of people know and love German sausages, but actually in different cities in

Italy will always have a type of local sausages that they are proud of. If you come to

think of it a lot of Italian cuisines love to add sausages in it, and so we had the idea to

import one of the best Italian sausages to London and add it into our Paella-Sotto –

The Tuscan sausage, mixed with Spanish paella and also Italian risotto. ”

Italians sure have a love of cooking for all and for the world. Simone believes that

Italian dishes influence the street food culture in UK, “I’m so proud of this stall, it

can’t be done without our team and partners, and I’m so happy all our customers

love our recipe and will constantly come back and become our regulars.”
