Korean chef Kim has been a sushi chef in London for four years before opening his own sushi stall – Mad Roll’s House. Not only is Kim specialized in creating amazing looking and creative sushi rolls, he also have a love of healthy food. “I am from Korea which has a lots of great and popular food, Korean food always have a good balance of taste and nutrition. But I’ve been to many place here in London, the lack of vegan or vegetarian Asian food really shocked me. So I wanted to challenge myself and not just bring ordinary recipes from restaurant or Korean restaurant,”
All the cuisine around the world has been Kim’s inspiration, he believes healthy eating should be fun and also an experiment of mixing different cuisine and culture together. It’s very difficult at first to promote healthy eating and vegan sushi because not many people like vegetarian food and judge before they try, but he’s happy to say most customers who gives his mad rolls a try will love it so much, one lady even screamed with amazement after her first bite!
Kim will also offer non vegan options at EAT LONDON STREET FESTIVAL because he wants to promote healthy eating and he knows some visitors would like to take baby steps on that.
“The street food scene in UK and South Korea is quite different. South Korea street food is everywhere, it’s part of our daily lives, so unlike UK there’s not lunch time trading or just a weekend trading. In South Korea street food stalls open all day and all week. If any one has a chance to visit South Korea I would defiantly recommend Dduk Bbok Ggi (Spicy Rice Cake), and for my fellow koreans who are visiting UK, I would recommend you to try sweet potato chips with sour cream.”
“Every mad sushi roll I create to me is a craft and love of art and food, it looks different and taste amazing! I also do sushi cooking classes upon request so come and meet me and try my madrolls at EAT LONDON STREET FESTIVAL!”
